I am brand new to circuit bending. I got this Kawasaki keyboard as my first attempt. Anyone ever done anything with one of these any ideas or suggestions? I'd also like to add a quarter inch jack in place of the built in speaker. Any ideas on how to do this would be helpful. I have basic soldering and recording studio wiring skills and knowledge. The more detailed the better! Thanks in advance. Here's a pic: http://flic.kr/p/97PQcB

I've never seen one of these before but I bet it'll have a single resistor controlling the pitch. Remove this and replace with a pot for pitch control. Probe the circuit board with a wet finger to find this resistor. Chances are there will only be one or two to choose from.
To add a jack socket -  remove the speaker and join the 2 speaker wires to your jack socket. You will have to put a resistor across the terminals or you will be deafened by its volume!
Make sure there is sufficient room for the jack socket and that you will be able to close the case when it's fitted.
Happy bending!
